Some Changes...

 For seven years I have enjoyed creating cakes for my own children as well as being blessed with the opportunity to create cakes for other people and their celebrations and milestones.  It has been an amazing honor and a privilege that I have enjoyed and I have loved celebrating your celebrations.  Lately my life has been going through a transition and I no longer feel right to continue using the ingredients that I used to take pride in.  Over the past few months I have been educated with how what we are eating is affecting our bodies and with this knowledge I have made a difficult decision.

Becoming aware of the adverse affects of dairy products and egg and meat products that are hurting our bodies rather than nourish them has started a change in my life and my view about those ingredients.  Some of my customer's children have experienced a physical reaction to these products that could have been life threatening.  I take that seriously and do not want any harm to come to anyone let alone any child who we are supposed to be celebrating - not harming them.  I feel bad that I caused this to happen because of not being aware of how harmful dairy and eggs are to our bodies.  My own son was living with a painful and uncomfortable skin condition that the doctor couldn't heal for years because of our use of dairy products.  There is an epidemic of sick and disease stricken people and a lot of it comes down to food.  Our bodies are not made to consume animal products and in turn we are poisoning our bodies and becoming sick.  Not only are these products hurting us but they are also hurting the planet and the consumption of these products also inflict abuse upon animals.

Dairy products contain a protein called, Casein, which has been found to be the highest contributing factor for cancer ever discovered, says Dr. T. Colin Campbell, Author of the China Study.  Dr. Frank Lipman explains that, "The body has a hard time digesting casein and this intolerance can also cause problems such as respiratory problems, digestive problems, inflammation, as well as acne and skin irritations such as; rashes and eczema."
The Physician's Committee for Responsible Medicine (PCRM) has found that dairy products can be tough to quit because they contain an addiction forming chemical, Morphine, which is naturally produced by cows.
When we drink milk we are drinking as Dr. Michael Klaper says, "Baby cow's milk...and the purpose of cow's milk is to turn a 65 pound calf into a 700 pound cow as quickly as possible.  Cow's milk is baby cow growth fluid." 

Eggs are a very concentrated form of animal protein and also carry with them the risk for salmonella poisoning and heighten the risk for diabetes, heart disease and even moderate consumption of eggs triples the risk of cancer as studies have shown.  As westerners we get too much protein and protein from animals are full of saturated fats that lead to disease.  It's not only the risk of disease and sickness but the free range and caged chickens from factory farms live in the cruelest and most horrific conditions

If you are interested in learning more then I highly recommend watching Forks Over Knives and Plant Pure Nation.  These can be found on Netflix for viewing at the moment.  Cowspiracy and Earthlings are also great documentaries that demonstrate the environmental destruction that is caused by meat and dairy consumption.  If you are more into reading then The China Study by T. Colin Campbell, Prevent and Reverse Heart Disease by Dr. Caldwell Esselstyn as well as Meatonomics by David Simon are informative books.  There are also countless YouTube videos and TED Talks by these informative doctors as well as Dr. Neal Barnard, MD and Dr. McDougall as well as great sites such as Forks Over Knives and One Green Planet

There is a ton of scientific evidence that show the adverse effects of these products upon the human body and how production of these products are also harming the environment and has created modern diseases such as H1N1, E. Coli, Salmonella, MRSA,  meningitis, bird flu and others.

I would love to continue creating cakes for you and your family and friends celebrations but I just could not live with myself and would not feel right if I keep using products that harm our bodies.  From here on, I will be making only dairy free and egg free cakes and cookies.  I hope that you will understand my decision.
I will still be able to make flavorful cakes that are dairy and egg free buttercream covered and fondant covered cakes.  The sugar cookies will remain the same but will be egg and dairy free.  I will still be making chocolate covered oreos with dairy free chocolate as well as adding a few dairy and egg free treats to the menu.
